1 bunch fresh kale

2 T virgin olive oil or coconut oil

sea salt

Parmesan cheese

Toss the clean kale with the remaining ingredients. Bake at 350° for 15 minutes or dehydrate until edges are browning & ‘chips’ are crunchy.

This is such a quick, easy & nutritious snack! And so many ways to fix it. Try some of these toppings:

garlic powder

Italian spices

taco seasoning

paprika

ground cashews

let your imagination run wild

Try crumbling up these chips & tossing on salads, in soups, or on your popcorn!

Or try with other greens. I’m planning to try spinach next.

3-4 very small fresh beets (or quarter larger ones), peeled & sliced extremely thin
1 T extra virgin olive oil
2 T Bragg’s liquid aminos
1/2 c vegetable broth
1/4 – 1/2 t liquid smoke
1 t apple cider vinegar
1/2 t honey
1/4 t garlic powder
1/4 t onion powder
1/4 ground mustard
1/8 t sage
1/4 t paprika
1 1/2 t crushed red pepper flakes

Mix well all ingredients but beets in 9″x9″ glass pan. Add beet slices & toss to coat all. Spread beets across bottom of pan (they will overlap).

Bake slices, uncovered, for 20 mins, remove from oven, stir well to bring bottom slices to top & recoat all with marinade remaining in pan. Continue baking & stir every 10 to 15 mins until they have absorbed the marinade & begin to curl & crisp at edges. Remove from oven & let cool.

These slices may be used as a topping for pizza, tho I enjoy just munching them. Add them as a topper at the end to any dish. They will not hold up to being combined with any other wet ingredients.

(I was actually given this recipe so can’t properly accredit the original cook on this one. Sorry!)
